Simple Chopped Salad

I keep this in our fridges at all times. I use it to top tacos, mix with tuna and spread on cracker, garnish a green salad or sometimes eat as a side.

And I double it when I have guests (who love it btw).

One Roma tomato chopped

One mini cucumber chopped (or half regular cucumber)

One clove of garlic minced

One slice of red onion minced

One small handful of cilantro minced (about 1-2T)

Salt & pepper to taste

One T. red wine vinegar

Two T. Olive oil

Directions: Mix well, chill for at least 30 min. store in airtight container in fridge.
